Chocolate Zucchini Bread

Introduction

Chocolate decadence with a serving of zucchini hidden inside! Just like a brownie - minus all the guilt. Substitute the sugar for calorie-free sweeteners to make an even more nutritious treat.

Number of Servings: 9

Ingredients

    1 1/2 cup zucchini, grated
    1 cup white whole wheat flour
    1/2 cup unsweetened cocoa powder
    1 tsp baking soda
    1/2 tsp baking powder
    1/4 tsp salt
    1/2 tsp ground cinnamon
    1/4 tsp pumpkin pie spice
    1/4 tsp nutmeg
    1/2 cup unsweetened applesauce
    1/4 cup granulated sugar (can use substitute)
    1/2 cup brown sugar (can use substitute)
    1/3 cup skim milk
    1 tsp vanilla extract
    1/2 cup semi-sweet chocolate chips

    *Chocolate chips may be left out completely to lower calorie and fat content. However, cocoa powder alone may not be a strong enough chocolate flavor for every palette, so may take some experimenting.

Directions

1. Preheat oven to 350 degrees. Spray loaf pan or muffin tins with cooking spray.
2. Grate zucchini (does not have to be peeled)
3. Combine flour, cocoa, baking soda & powder, salt, cinnamon, nutmeg, and pumpkin pie spice.
4. In seperate bowl whisk together applesauce, both sugars, milk, and vanilla.
5. Fold zucchini into wet mixture.
6. Combine wet and dry mixtures. Stir until incorporated.
7. Fold in chocolate chips.
8. Pour into loaf pan. Sprinkle with 10-15 extra chocolate chips if desired.
9. Bake 55-65 minutes or until toothpick inserted into center comes clean.
10. Remove from oven and let cool. Remove from pan, slice, and enjoy!

*Loaf pan not neccesary - Can use muffin tins or baking dish as well.
