Cooking this in the slow cooker all day - I came home to the yummiest smelling home! MMmm!This was a cooking light recipe that I modified a bunch to make it lighter and for me to use during lent. The original included Boca sausages, Parmesan cheese, butter and dry bread crumbs.

Ingredients

Olive Oil, 1 tbsp
Onions, raw, 1.5 cup, chopped
Carrots, raw, 1.5 cup, diagonally cut slices (1/2 inch thick)
Parsnips, 1.5 cup diagonally cut slices (1/2 inch thick)
Garlic, 2 cloves minced
Vegetable Stock low sodium, .3/4 cup
Thyme, ground, .5 tsp
Salt, .1/4 tsp
Pepper, black,1/4 tsp
1bay leaf, whole
Petite Diced tomatoes-recipe ready, 3.5 cup
Great Northern dried beans, 1 cup
Directions
Prepare and cook the beans according to the directions 1 cup dried should equal 3 cups cooked.
Heat oil in a large nonstick skillet over medium heat. Add onion, carrot, parsnip, and garlic; cover and cook 5 minutes or until tender.
Place in a 5-quart electric slow cooker. Add beans, broth and spices. Cover and cook on low 8 hours or until vegetables are tender. Be prepared for the most delicious smell if you go to work then come home!
Enjoy a serving of about 1 cups. Makes 8 servings
The original recipe called for 2 meatless Italian sausages chopped - added at the end with 1/4 cup dry bread crumbs mixed with 2 T melted butter and 1/4 cup fresh grated Parmesan cheese blended together. Sprinkle with parsley.
