Introduction

Once the preserve of dodgy chippies, fish cakes are now smart dinner party fodder, Fish cakes are a great way to use up leftover mashed potato.
Serve with tartare sauce and a simple salad.
Once the preserve of dodgy chippies, fish cakes are now smart dinner party fodder, Fish cakes are a great way to use up leftover mashed potato.

Ingredients

    110 grams cooked fish
    110 grams, mashed potatoes
    2 teaspoons, chopped parsley
    1 pinch sea salt
    1 pinch ground white pepper
    2 teaspoons, vegetable oil for frying
    1 tablespoon, flour for dusting

Directions

Makes 2 Fishcakes 220 grams serves 1 person

Flake in the fish in decent-sized chunks and season, gently mix everything and, using floured hands, shape into 2 cakes.
Lightly dust with flour, and chill for at least 30 minutes (important or they will come apart in the pan).
Heat the oil in a large frying pan and fry the fish cakes for 3 to 4 minutes each side or until they are golden, crisp and heated through. Drain on kitchen paper.
