Introduction

Number of Servings: 16

Ingredients

    2 medium eqqplant with skin, cut into cubes
    2 zucchini, cut into cubes
    1 green pepper, seeded and diced
    1 red pepper, seeded and diced
    2 sweet onions diced
    3 cloves garlic, minced
    1 28 oz can crushed tomatoes
    1 T dried basil

Directions

Combine all the chopped veggies, canned tomatoes, garlic and basil in large stockpot. Bring mixture to a boil, reduce heat to simmer and cover. Simmer for 1 hour, stirring about every 15 minutes. Remove cover from pot and cook an additional 15 minutes.

Makes 16 one half cup servings.

Delicious served over brown rice or spaghetti squash!
