2 medium eqqplant with skin, cut into cubes
2 zucchini, cut into cubes
1 green pepper, seeded and diced
1 red pepper, seeded and diced
2 sweet onions diced
3 cloves garlic, minced
1 28 oz can crushed tomatoes
1 T dried basil
Makes 16 one half cup servings.
Delicious served over brown rice or spaghetti squash!
