Ingredients

    - Flax Seed Meal (ground flax), 1/4 cup
    - Baking Powder, 1/2 tsp
    - Cinnamon, ground, powder, 1 tsp
    - Splenda , 4 tsp or 4 packets
    - Egg, fresh, 1 large
    - Organic Smart Balance Butter, 1 tbsp

Directions

Mix all dry ingredients in a coffee mug or bowl, then stir in wet ingredients until well blended. Microwave for one minute.

    I've made this before but used Coconut Oil (which is GOOD for you) rather than the Smart Balance. You can also flavor it with sugar-free syrups and chopped nuts. This is a staple in my breakfast menu planning. - 3/11/08

    I made this without the Flax Seed Meal, maybe that is why I didnt like the taste. It looked visually tasty though. I was surprised that it actuall got fluffy with only 1 minute! but the bottom of the muffin in my case tasted really really reeeaaallly like salty for some reason... - 7/14/08

  • Fantastic and delicious and easy to make. A perfect breakfast. I put the Smart Balance in the mix and it was not too dry. Very tasty. - 7/5/08

  • Very easy and convenient. I use 1 teaspoon of Move Over Butter (butter substitute) in making the muffin then I add the rest to 2 halves when it's done cooking so it seems more moist. - 5/27/08
