Crab and Cilantro Salad

Introduction

Number of Servings: 2

Ingredients

    1/4 cup red onion
    2 Tbsp cilantro, chopped
    1/2 tsp ground cumin
    1/2 tsp lime zest
    3 Tbsp fresh lime juice
    3 Tbsp light mayo
    8 oz crab
    3 cups romaine lettuce, chopped
    2 small tomatoes, quartered
    1/2 avocado, diced

Directions

Mix first 7 ingredients & season with salt & pepper to taste.
Combine last 3 ingredients and divide between 2 bowls.
Top each with 1/2 of the crab mixture.

  • I really, really loved this! Mix the may and lime and coriander separately to get a smooth dressing, then add to crab. I used imitation crab, because that's what was on hand, and it was still fantastic. - 6/27/11

  • I loved this recipe. I ate a double-serving for dinner. Fresh, easy to make, healthy, and (most importantly), very tasty! So good that I made it again the next evening - ran out of avocado, so made it without and it was (almost) as good - and lower fat and calories. - 3/16/08
