Mexican style Quinoa

Number of Servings: 7

Ingredients

    1 Tbsp Olive Oil
    1 cup uncooked quinoa
    2 cups 99% fat free chicken broth
    1 medium onion, chopped
    1 Tbsp minced garlic
    1 (10 oz) can Hot Rotel Tomatoes, drained
    1 (11 oz) can sweet corn, drained
    1 (15 oz) can black beans, rinsed
    4 wedges light laughing cow cheese (any flavor)
    1 tsp chili powder
    0.5 tsp garlic powder
    0.5 tsp ground cumin

Directions

(Use water instead of chicken broth to make this vegetarian).
Place quinoa and chicken broth in pan and cook as directed on package.
Saute onion and garlic in olive oil until translucent. Add tomatoes, corn, black beans, and spices. Heat thoroughly. When quinoa is ready, stir in laughing cow. Add laughing cow/quinoa mixture to the rest of the ingredients and mix. Makes 7 1-cup servings.
