Classic Potato Leek Soup (without meat) 1 serving is 2 cups

Ingredients

1 tsp extra virgin olive oil
3 leeks, white part only, sliced, rinsed well
3 cups diced golden potatoes
2 cups chicken stock
1/2 tsp ground celery seed
1 cup nonfat milk
1/4 tsp freshly ground black pepper
salt to taste
Directions
Makes 4 servings.
1. Heat oil in a 6-quart pot over medium-high heat for 1 minutes. Add the leeks and cook until they are wilted, 3 to 5 minutes.
2. Stir in the potatoes, stock, and celery seeds. Cover and bring to a boil. Reduce the heat an simmer 10 minutes. Stir in the milk and pepper. Cook (do not boil) until the potatoes are tender, 5 to 10 minutes. Taste and season with salt if needed.
