Pumpkin Pie Pancakes

Introduction

These are like little pumpkin pies - if you like the texture of pumpkin pie, you'll love these. The outside is pancake like and then there's the pie texture when you bite into it. Number of Servings: 32

Ingredients

    1/2 cup sugar
    2 tsp pumpkin pie spice
    1/2 cup egg beaters
    1-15 oz. can pumpkin (NOT the pie mix)
    1-15 oz. can evaporated milk, nonfat
    2 cups heart smart bisquick mix

Directions

Mix sugar, salt, cinnamon, ginger and cloves in a small bowl. Stir together egg substitute, pumpkin and sugar-spice mixture. Gradually whisk in evaporated milk. Stir in baking mix, one cup at a
time.

In 1/8 cup portions, pour onto an electric skillet pre-heated to 325F and sprayed with butter flavored non-stick cooking spray. Cook on first side for 5 minutes, flip, and cook for 2 more minutes. (You can also cook on a nonstick skillet heated on low.)

Makes 32 pancakes
