Chicken Meatball Soup

Ingredients

    10 oz Ground Chicken
    1 Cup Cooked Stove Top Stuffing
    1 Egg White
    2 Cups Chopped Onion
    1 Package Frozen Mixed Vegetables
    1 Package Frozen California Style Mixed Vegetables (with Kidney Beans)
    5 - 6 Cups Fat Free Chicken Broth
    1 Package Frozen Kale
    2 TSP Basil
    1 Bay Leaf
    2 TSP Garlic
    1 Cup Alphabits Macaroni

Directions

Mix ground chicken, egg white and stove top. Form mixture into mini meatballs and set aside.

Add chicken broth, basil, garlic, bay leaf and onion to a large pot and set to a boil. Add mini chicken meatballs. Cook for 25 minutes at medium heat.

Add frozen kale, both packages of frozen vegetables and macaroni, cook and additional 25 minutes on medium heat.

Let sit on stove on low heat until ready to serve

NOTE - This can also be done in a crockpot
