southwest White Chicken Chili

Number of Servings: 6

Ingredients

    1 tbsp vegetable oil
    4 boneless skinless chicken breasts
    4 tsp chili powder
    2 tsp ground cumin
    1 large onion
    1 medium green bell pepper (about 3/4 cup)
    1 can (10.75 oz) Campbell's Cream of Chicken soup
    3/4 cup water
    1.5 cups frozen whole kernel corn
    2 cans (about 15 oz each) white kidney beans, rinsed and drained
    2 tbsp shredded Cheddar cheese

Directions

Heat oil in a saucepan over medium-high heat. Add chicken, chili powder, cumin, onion and pepper and cook until chicken is cooke through and vegetables are tender, stirring often.

Stir in soup, water, corn and beans in saucepan and heat to a boil. Reduce heat to low. Cover and cook 5 minutes, stirring occasionally. Sprinkle with cheese.

  • I got this recipe from a coupon section 4 Campbell soup. Its also on their website campbellkitchen.com. We love it and have it at least 2 0r 3 times a month. Calorie count is different, but I think here they count 1 serving a cup. Campbell's is 1 1/4 cup. Thanks 4 making it easy 2 add 2 my tracker. - 2/22/13
