A great way to get whole grains into your yummy home-made pizza! Makes two thin-crust or one regular-crust 12" pie. Works best with a heavy-duty stand mixer, but can be done without. Ingredients

    1 package active dry yeast
    1 tsp brown sugar
    1 cup warm water
    1/4 teaspoon salt
    2 teaspoons olive oil
    1 cup spelt flour
    1.5 cup whole-wheat flour
    2 tablespoons cornmeal

Directions

Dissolve yeast in warm (100-110 degree F) water with the brown sugar in a warmed mixer bowl. Add salt, olive oil, and half the flour. Using a dough hook, mix about 1 minute. Add remaining flour and mix for about two minutes, until the dough cleans the side of the bowl. Continue kneading for about two or three minutes longer.

Place dough in greased bowl, turning to grease top. Cover and place in a warm spot, free from drafts, to rise for about an hour or until doubled in bulk. Punch dough down.

Brush pizza pans with oil. Sprinkle with cornmeal. Press dough across bottom of pans, forming a collar around edge to hold topings. Add toppings as desired. Bake at 450 degrees for 15 to 20 minutes.
