French Vegetable Soup

Ingredients

    1 Tbsp olive oil
    2 onions, sliced
    1 portabella mushroom, chopped, or 1 cup chopped crimini mushrooms
    1 large red bell pepper, chopped
    3 cups cherry tomatoes, chopped
    4 cups fresh spinach, chopped
    1.5 cups navy beans, rinsed
    1 carrot chopped
    4 cups low sodium chicken broth
    1/2 cup red wine
    1 Tbsp worcestershire sauce
    1 TBSP herbs d' Provence
    2 cups water

Directions

Saute onions and mushrooms in oil til browned. Add Peppers, carrots, and tomatoes and saute some more. Add 1 TBSP herbs d' Provence, broth, beans and bring to a boil. Add spinach and garlic, worcestershire, water, and wine. Return to boil. Adjust seasonings and serve.
