Tuscan Pumpkin Soup

Introduction

From a WW meeting. Use low sodium broth. Season to taste. From a WW meeting. Use low sodium broth. Season to taste.
Number of Servings: 4

Ingredients

    1 can pumpkin
    1 can white beans
    3 1/2 cups low sodium chicken broth
    1 medium onion
    1/4 tsp oregano
    Salt and pepper to taste
    4 T grated parmesan cheese

Directions

Makes approximately four (4) one cup servings. Spray deep pot with non-stick spray. Saute onions at low/medium heat until tender. Add 1 can pumpkin, 3 1/2 cups chicken broth, 1 can white beans and seasoning. Simmer for 8 minutes. Carefully place 1/2 recipe or less in blender and pulse until smooth. Return to pot and reheat. Serve with a tablespoon of grated parmesan cheese. Really good low calorie, high fiber soup.
