An easy savory soup great with a salad or some artisan bread. You can make it faster with canned beans, but the slow simmer sure makes the house smell great. Ingredients

1 lb dry white beans, cooked and drained
2 cups onions,chopped
1 clove garlic, minced
1 T olive oil
1 oz white wine
7 cups chicken broth-lower sodium
1 T dried crushed rosemary
1 tsp dried thyme leaves
Directions
Makes about 8 1-cup servings
Soak beans overnight. Cover with water and boil 1-1 1/2 hours.
Drain beans. Add oil, onion, carrots, celery, and garlic and saute until onions are translucent. Add back the beans. Add broth and herbs. Cook until veggies and beans are tender. Puree the soup. Serve garnished with some fresh chopped tomato.
