Busy Night Dinner

Introduction

A quick one pan meal with items you probably have on hand. A quick one pan meal with items you probably have on hand.
Number of Servings: 10

Ingredients

    Fresh Spinach, 1 10oz package
    Lean ground beef, 2 pounds
    Shredded Mozzarella cheese, 4 oz
    Diced tomato with Italian Seasonings, 1 can
    Whole Wheat rotini, 8 oz
    Water, 3 cups

Directions

Brown hamburger and drain.
Add 3 cups of water and 8 ounces of pasta to pan. Bring to boil. When pasta is mostly cooked add spinach in small handfuls until entire bag is incorporated into pasta. Add can of diced tomato and ground beef. Stir well. Simmer 5 minutes. Sprinkle with mozzarella cheese. Cover and let cheese melt (about 2 min). Serve hot.
Approximately 3/4 cup servings
It easily fed our family of five with enough for leftovers for lunch!
