Rose Tobin's Irish skillet soda bread

Number of Servings: 24

Ingredients

    *Flour, white, 4 cup (remove)
    Granulated Sugar, 0.5 cup (remove)
    Baking Soda, 1 tsp (remove)
    Baking Powder, 1 tsp (remove)
    Salt, 0.25 tsp (remove)
    *Caraway Seed, 1 tbsp (remove)
    Raisins, 1.5 cup (not packed) (remove)
    *Egg Beaters (Publix Eggstirs), 2 serving (remove)
    Buttermilk, lowfat, 1 cup (remove)
    Butter, unsalted, 1 stick

Directions

mix all dry ingredoents then cut in butter; add caraway and raisins. Mix egg (I use eggstirs) with buttermilk and add gradually to dry mixture (batter will be very sticky - (work with fork/ fingers or dough hook on electric mixer). Put into greased 10" cast iron skillet and level out so all areas are covered. Bake at 375 for 50 minutes. When done (cake tester comes out clean) transfer to cooling rack. When cool cut into 24 slices and serve with butter.
