Introduction

This is a very filling vegetarian dinner but if you want meat, just substitute ground beef, chicken or turkey for the smart ground. I play around with the spices every time I make it. This is a very filling vegetarian dinner but if you want meat, just substitute ground beef, chicken or turkey for the smart ground. I play around with the spices every time I make it.
Number of Servings: 16

Ingredients

    6 Corn tortillas
    2 cups roasted red pepper hummus
    1 onion diced
    2-3 cloves garlic diced
    28 oz crushed tomatoes
    1 pk smart ground (soy crumbles; can sub ground meat)
    2 tsp cumin,
    1 Tbl chili powder
    2 15 oz cans chili beans
    2 cups frozen corn

Directions

Saute onions and garlic (in water); add smart ground, tomatoes, cumin and chili powder; set aside. In separate bowl mix corn with chili beans. Put 1/4 cup tomatoe mixture in bottom of 9 x 13 pan, layer tortillas (tear as necessary to fit pan), hummus, corn mixture, tomato mixture - repeat; bake at 350 for 20-30 minutes. Makes 16 1-1/2 cup servings.

  • It would be really good if you could include the quantities required in this recipe, otherwise the nutrition information is meaningless. What exactly is "smart ground", some kind of spice? As there are members here from many countries it would be helpful to use a generic term if possible. - 3/16/11

    I put in all the quantities when I entered the recipe, not sure what happened (this is the first recipe I've submitted). I'll go back in and see if I can edit it. Smart Ground is a brand of meat substitute, but any ground meat can be used or other brand of meat substitute.
