1medium celery stalk , chopped
1/4tsp black pepper
1tbsp fresh lemon juice , or hot sauce
8oz cooked shrimp , shells and tails removed, and cut into 1/2 inch pieces
4tbsp fresh chopped onion , green onion
4tbsp light mayonnaise , gluten-free
2 Mix thoroughly together tomato pulp with all remaining ingredients.
3 Refrigerate all ingredients overnight to allow the flavors to blend.
