Ingredients

2tbsp olive oil
1large red bell peppers , seeded and chopped
1cup red onion, sliced
1tsp minced garlic
2lb raw medium shrimp , peeled
3pinch fresh basil , chopped (or 1/2 teaspoon dried basil leaves)
1/2cup fresh cherry tomatoes , halved
16oz fresh spinach leaves , washed and stemmed
1oz pine nuts , 2 tbsp
11oz mandarin oranges, canned, with juice, drained
Directions
1 Using a large skillet, heat the olive oil and sauté the red pepper, onion, and garlic for 5 to 7 minutes.
2 Add the shrimp, cooking over medium-high heat until the shrimp are done, 5 to 7 minutes.
3 Add the basil, tomatoes, and spinach, cooking until the spinach begins to wilt.
4 Add the pine nuts and oranges, cooking until well heated, and serve.
