Primal Energy Bar (From Cave Man Diet)

Introduction

Meal replacement bar, like if you get up late and can't make breakfast. Meal replacement bar, like if you get up late and can't make breakfast.
Number of Servings: 16

Ingredients

    1 cup slivered almonds
    1 cup pecans
    1/2 cup almond meal/sesame seed meal/flaxseed meal or combination of any of these
    1/2 cup unsweetened shredded coconut
    1/2 cup almond butter
    1/2 coconut oil
    2 tsp. vanilla extract
    1 tsp. raw honey
    1/2 tsp. sea salt
    1 cup dried cranberries or dried blue berries (preferably unsweetened)

Directions

On a cookie sheet, toast nuts and coconut until golden brown. Toss once or twice while toasting.
Pour this mixture into a food processor and pulse until nuts are chopped and mixture is coarsely ground. Add almond meal/sesame meal/flaxseed meal. Pulse to mix.
In a microwave safe bowl, melt coconut oil and almond butter until creamy. Stir until smooth. Add vanilla, honey and sea salt. to this mixture. Mix thoroughly.
Add this to food processor. Pulse to mix.
Add berries. Pulse to mix.
Pour mixture into an 8 x 8 pan.
Refrigerate for 20 minutes or until firm.
Cut into 16 squares.
Keep refrigerated. Cover pan with plastic wrap or wrap each "bar" in plastic wrap.
