Pumpkin Bran Muffins

Ingredients

    1 1/2 cups whole wheat flour
    1 7/8 cups bran
    1 tbsp baking soda
    2 tbsp sugar
    1 tsp cinnamon ( I use 2)
    1/4 cup brown sugar
    1 1/2 eggs + 1 egg white
    2 cups pumpkin
    3/4 cups juice (pineapple, apple, orange)
    1 tsp vanilla
    1/8 cup margarine
    1 cup sour skim milk
    1/3 cup raisins or chopped dates (optional)

    Combine dry ingredients. In a separate bowl, combine remaining ingredients, except raisins/dates. Add to dry ingredients. Mix well. Add raisins/dates and mix.

    Divide into sprayed muffin tins or sprayed,, lined muffin tins.
    Recipe called for 24 muffins, but I got 22 good sized muffind (no raisins/dates), and calculated recipe based on 22 muffins.

Directions

Bake @ 375 for 15 to 20 minutes.

These muffins are surprisingly moist, but could probably use the raisins........ enjoy!!
