1 can black beans (rinsed & drained) or 1.5 cups cooked beans
(calculated using COOKED beans- not canned)
1/4 c. chopped onion
1 tsp cumin
1 T. coconut oil (or other oil)
Salt & Pepper to taste
*Sprinkle of chili powder (optional) to taste
Heat oil in skillet, and fry bean cakes for five minutes per side.
Enjoy warm or cold, with salsa and/or sour cream.
*NOTES: I used a food processor to pulse the mixture just a little, with chunks remaining. I had trouble getting my "cakes" to hold together when I made these into 4 "larger" patties. Flipping them in the pan was a challenge, and they flopped and fell apart a bit. However, I will try these in SIX cakes next time and hopefully they'll hold together better. They still taste great, even crumbled!
