Chickpea Veggie Burgers

Introduction

A yummy alternative bean burger. Served with feta, a creamy tzatziki or tahini sauce with some fresh tomato and warm pita it is DEE-licious. A yummy alternative bean burger. Served with feta, a creamy tzatziki or tahini sauce with some fresh tomato and warm pita it is DEE-licious.
Number of Servings: 4

Ingredients

    15.5 oz of Chickpeas (Garbonzo beans) or 1 can
    1/4 cup chopped peppers
    2 eggs
    1 tsp olive oil
    1/2 cup bread crumbs
    1 tsp pepper or other spice
    1 tbsp garlic powder
    1 tbsp onion powder

    You can sub out other veggies, add more, and change up the spices if you'd like. You might only need one egg, but I needed two to make it sticky enough.

Directions

Process the chickpeas and peppers in a food processor. Remove from the processor and stir in with the spices and bread crumbs. Add olive oil and egg and mix together. The dough should be a bit sticky. You can add the second egg or some more bread crumbs to achieve the right consistency.

Shape into four patties.

Heat additional olive oil in a skillet on medium heat. Sear each side for 2-3 minutes.

Serve with a bun or warm pita, tomatoes, lettuce, and something creamy. Feta is my favorite. Hummus makes and excellent spread as well.
