Irish Soda Bread (Jesuit recipe)

This recipe is taken from "The Secrets of Jesuit Breadmaking" by Brother Rick Curry.

It's a little heavy but makes for a great March breakfast. I'd like to know how people can make this more healthy

It's a little heavy but makes for a great March breakfast. I'd like to know how people can make this more healthy

Number of Servings: 20

Ingredients

    5 cups flour
    3/4 cup Splenda
    2 1/2 cups Craisins, golden raisins or currants (I like to use some of each)
    2 1/2 cups lowfat buttermilk
    1 stick butter (room temp)
    1 large egg, beaten
    3 tablespoons caraway seeds
    2 teaspoons baking powder
    1 1/2 teaspoons salt
    1 teaspoon baking soda

Directions

1. Preheat oven to 350. Generously butter two 9x5 inch pans
2. Soak craisins/raisins/currants in hot water for 15 to 20 minutes. Drain and reserve.
3. Stir together dry ingredients (minus fruit)
4. Cut in butter with hand and mix until dough is grainy. Stir in fruit and caraway seeds.
5. Add buttermilk and egg and stir and until well-moistened. Shape into two loaves and place in pans.
6. Bake 1 hour and test for doneness. Cool in pans for 5 minutes before transferring to a wire rack.
