Coach Nicole's Pumpkin & Apple Waffles

Ingredients

1 cup whole wheat pastry flour
1.5 tsp baking powder
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
2 organic eggs
2 Tbsp organic cane sugar (or brown sugar)
1/2 cup pumpkin puree (fresh or canned)
1 medium apple of choice, finely chopped and divided
Directions
Preheat waffle iron.
Combine flour, baking powder, nutmeg and cinnamon in a small bowl.
In a separate bowl, mix eggs with sugar. Add to the dry mixture (note that the mixture will be very dry at this stage). Fold in the pumpkin and half of the chopped apple until well combined into a thick, moist batter.
Add batter to waffle iron--about 1/4 cup batter per 4-inch waffle--and cook until done. Garnish cooked waffles with the remaining apple and top with real maple syrup. Enjoy!
Makes about six 4-inch waffles. Serving = 2 Waffles.

My husband said it wasn't waffle but a "little apple pie cooked in the waffle iron". I really liked these BUT I used them to try out my brand new Waring Pro Professional waffle maker wedding gift and the batter seemed too thick for this application). Tasted great, filling, and plenty sweet - 11/8/08

I made these with flaxseed instead of eggs, and a banana instead of the apples. They were amazing! While mixing all the ingredients, I noticed it was going to be way too thick, so I added a splash of soymilk (1/8-1/4 cup). That helped with the consistency. Thank you for a wonderful recipe! - 5/28/12

I doubled the batch and substituted 1/2 c white flour, and applesauce. The waffles turned out heavy compared to the "unhealthy" waffles I'm used to making, but they tasted good. The kids loved them with a small amount of butter and syrup. I topped mine with 1/4 c applesauce. I'll add milk next time. - 12/2/11

Will definately make again! I didn't have access to ww pastry flour (I will order online for next time), so I used pancake mix and I subbed 1/2 c. unsweet applesauce for the apple. I used a little bit of milk to thin it out, I'll use applejuice next time just to give some more apple flavor. Delish!! - 10/31/10
