Ingredients

    200g blanched, peeled fava beans
    125g prosciutto
    Several springs of mint
    100g mozzarella
    2 Tbl olive oil
    1 Tbl lemon juice
    Freshly cracked black pepper

Directions

Arrange the beans, proscuitto, mint and mozzarella on a plate. Whisk the remaining ingredients to make a dressing.
