Fauxe Baked Potato Casserole

Introduction

This is an amazing low carb casserole. Creamy, cheesy, and full of flavor! This is an amazing low carb casserole. Creamy, cheesy, and full of flavor!
Number of Servings: 6

Ingredients

    16-32 ounces frozen cauliflower, thawed and steamed
    8 ounces cream cheese,softened
    8 ounces cheddar cheese
    1 tsp onion powder or 4 green onions, chopped
    1/4 tsp salt
    1/4 tsp pepper
    3 slices of bacon, chopped and fried
    Paprika, optional

Directions

Steam cauliflower for 8-10 minutes until soft. With the back of a spoon mash the cauliflower, leaving slight chunks. Set aside, in bowl mix together cream cheese, cheddar cheese, onion powder or green onion, salt, and pepper. Stir in cauliflower and pour into 2 quart casserole dish. Sprinkle with more cheese and top with fried bacon. Optional: lightly sprinkle with paprika. Bake at 350 degrees for 30 minutes.
