3 cups cooked rice (good for using up leftovers)
2 tablespoons canola oil
2 tablespoons chopped oil
2 eggs, well beaten
2 ounces (about 1/2 cup) cooked and cubed chicken
1 tablespoon soy sauce
Cook the onions for a few seconds.
Add eggs and cook another few seconds.
Add rice, chicken and soy sauce and stir for about 3 minutes.
Can substitute ham or small shrimp for the chicken, but it will change the calories.
Serving Size: Makes 4 almost a cup sized servings
