Egg Drop Soup

Ingredients

    2 cans chicken broth
    1 can of water
    2 Tablespoons cornstarch mixed with 4 Tablespoons water
    2 eggs, slightly beaten
    1 Tablespoon chopped scallions

Directions

Put broth and water in a covered pot and bring to a boil.
Add the cornstarch mixture and turn off the heat.
Pour in the beaten eggs while you stir gently.
Add the scallions and serve.

Serving Size: Makes 4 1-1/4 cup servings
