1 medium head cauliflower
2 bay leaves
1.5 cups Nature's Promise low sodium chicken broth
1 cup skim milk
1 tbsp Dijon mustard
1/2 tsp nutmeg
1 tsp pepper
2 cups Nature's Promise whole wheat elbow macaroni
8 oz Nature's Promise sharp cheddar cheese (grated)
1/4 cup shredded Parmesan cheese
In a blender or food processor, process cooked cauliflower, broth, milk, egg, cheddar cheese and spices together.
Spray the sides of a large crock with cooking spray and add macaroni. Pour liquid mixture over top and stir to combine.
This cooks rather quickly and needs to be stirred occasionally, so this is not a "set it and forget it" crock recipe. Cook on low for up to 4 hours, or on high for up to 3 hours. It will be done when pasta has reached desired tenderness and has puffed up to fill the crock.
The top will be brown and bubbly. 30 minutes prior to serving, top with shredded Parmesan cheese.
I chose to leave the breadcrumbs off this recipe since I don't feel that you need them, but if you're a traditionalist, go ahead and add them at the same point you add the Parmesan. Cook for an additional 30 minutes to let brown. Bread crumbs are not included in calorie counts.
