Introduction

tasty cauliflower cheese soup. Modified from AllRecipes recipe by substituting chicken broth for the milk in the original recipe. tasty cauliflower cheese soup. Modified from AllRecipes recipe by substituting chicken broth for the milk in the original recipe.

Ingredients

    .5 c celery
    .5 c carrots
    1 large potato
    .25 c onion
    1c cauliflower

    **roux
    .25c butter
    .25c flour

    3c chicken broth

    4oz cheese

Directions

steam veg together in a big pot. Put softened cauliflower in blender to chop it up very fine (I only did this to hide it). return to pot. In another pot make the roux out of butter and flour. I cooked it until it was peanut butter color. Add broth. Cook until thickened a bit. stir in cheese a little at a time, letting it melt. Add broth mix to veg in big pot. Mix and season with salt & pepper.

Serving Size: makes 4 1.5c servings
