Cornflake Drumsticks with yogurt

A nice way to pretend that you breaded the chicken. Half the calories, same taste and crunchiness. Works well with chicken wings and breast, too!

Number of Servings: 6

Ingredients

    * Chicken Drumstick, 700 grams (6 drumsticks, skin on)
    * Olive Oil, 1 tbsp
    * Yogurt, plain, low fat, 200 grams
    * Total Corn Flakes Cereal, 70 grams
    * Pepper, black, 1 tbsp
    * Chili powder, 1 tsp

Directions

Mix yogurt with the black pepper and the chilli powder. Add salt if you like.

In another bowl, crush the cornflakes until they fit your taste (some like the bits bigger, some like them well crushed).

Put some baking paper in a cooking tray, ready for the oven.

Take one drumstick at a time, cover it with yogurt mix, then cover it with cornflakes and place it carefully in the tray. Once you breaded all drumsticks, put the tray in the oven at 200 degrees for 45 minutes or so.

Enjoy with mashed potatoes - great comfort food!


Serving Size: Makes 6 servings, 1 drumstick each.
