Spinach Pesto

Introduction

I wanted some pesto, but didn't want all the calories, so I made my own with spinach instead of basil. You would never know it's not a full loaded high calorie pesto! My friend who is a pesto finatic, had no idea that it was made with spincach and no nuts! The only diffrence between the two is the shade of green. You can add greek yogurt to it to make it creamy! Number of Servings: 8

Ingredients

    4 Cups of Baby Spinach leafs
    1 Clove of Garlic
    1 Tbsp. of Parmesean Cheese
    3 Tbsp. of Olive oil
    1 Juice from a lemon (cut in half)

Directions

In a food processor add your spinach, whole garlic clove, 1 tbsp. of olive oil and 1/2 the juice of the lemon. Process until leaves are broke up and then slowly add the rest of the olive oil, the other half of the lemon and remaining cheese (optional salt and pepper to taste).

Refrigerate when done. Makes about 1/2 cup

You can add greek yogurt to get a cream base dip. I use the pesto to put on chicken, pasta and turkey sandwiches.
