Roasted Red Pepper Dressing

Introduction

Since there was no entry for our own dried pepper flakes, I used the calories from the equivalent fresh product. Likewise our roasted peppers are stored in olive oil so I estimated the amount that came along for the ride when I added them. Ingredients

    Non fat plain Greek yogurt (I used Oikos) 1 cup
    Full fat sour cream 4 tbsp (for consistency I used fat version)
    cider vinegar 1 tbsp
    roasted red peppers 1/4 cup
    dried pepper flakes 2 tbsp
    olive oil--only if your roasted peppers were not packed in it, 1tbsp

Directions

Mix all ingredients together combining enough to break up the roasted peppers and thoroughly blend all items into a cohesive dressing.

Serving Size: 1.5 tbsp
