1 large seedless cucumber - very thinly sliced
1 medium sweet onion - very thinly sliced
1 cup nonfat plain Greek yogurt
2 tbsp rice vinegar
1 tbsp Truvia or granulated sugar
2 tsp kosher salt
1 tsp cracked black pepper
1/4 cup finely chopped fresh dill
Mix yogurt, sweetener, rice vinegar, salt, pepper and dill - make sure it is mixed thoroughly.
Squeeze as much moisture out of the cucumbers and onions as possible.
Place in a bowl and mix in the dressing.
Serving Size: Makes 5 1/2-cup servings
