Roasted Phoha snack

Ingredients

    Thick POHA (Beaten Rice), 300 gram(s) (remove)
    Olive Oil, 1 1tsp
    Mustard seed, yellow, 1 tsp
    *Hot Chili Peppers, 4 pepper
    Peanuts with skin,25 cup
    Cashew Nuts, .25 cup, halves
    Curry leaves, 1 sprig.
    All the ingredients are available in Indian stores including raw nuts.

Directions

Heat oli in a 4 Qt. Dutch oven with a heavy base. Drop mustard seeds. When they pop, add chopped red hot chilli peppers, chopped fresh curry leaves, peanuts and roast, stirring continuously. When peanuts become fragrant, add cashews until they are golden brown. Drop the (phova) Phoha in and stir constantly on low flame until crispy and not chewy. Stores in a tight lidded tin for 3-4 months.
