Introduction

after testing out several low carb pancake recipes [my own and others] I finally made one that came out light and fluffy and yummy! :) after testing out several low carb pancake recipes [my own and others] I finally made one that came out light and fluffy and yummy! :)
Number of Servings: 6

Ingredients

    1/3 cup atkins bake mix
    1 scoop (1/2 serving) isopure zero carb whey protein powder banana flavor
    1 packet splenda
    1 tablespoon baking powder
    1 egg, whole raw large
    1/3 cup water

Directions

put all dry ingredients in small mixing bowl. meanwhile, preheat pancake griddle to 375 degree Fahrenheit. add wet ingredients and stir well with whisk but do not over beat. Let batter rest a minute. Grease griddle. Pour out six pancakes. When bubbling, flip over each pancake. Eat and enjoy.
makes 6 large pancakes
