Introduction

This is a great way to use up extra veggies and work them into breakfast. This is a great way to use up extra veggies and work them into breakfast.
Number of Servings: 4

Ingredients

    3- large brown cage free organic eggs
    1 cup- egg beaters
    1/4 cup- 2% lactaid
    green pepper
    yellow squash
    broccoli
    onion
    mushrooms
    tomatoe

Directions

mix all ingredients except margarine together in a large bowl.

Melt margarine in a large skillet.

Add egg mixture, cover and cook on low heat until cooked all the way through and broccoli is tender.

Serving Size: makes 4 servings
