Steamy Beefy Veggy Rice

Number of Servings: 6

Ingredients

    * Olive Oil, 3 1tsp
    * Scallions, raw, 3 medium (4-1/8" long)
    * Garlic, 4 tsp
    * Roast Beef - Slice, 8 oz
    * Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano, 3.5 serving

    * Water, tap, 6 cup (8 fl oz)
    * White Rice, long grain, 3 cup
    * Sesame Oil, 1 1tsp
    * Green Peppers (bell peppers), 1 cup, strips
    * Peppers, sweet, red, fresh, 1 cup, sliced
    * Mung Beans, .5 cup

Directions

Take the sliced beef, further cutting it into strips. Place a wok-like pan on medium heat. Add the olive oil, minced garlic and diced green onions and saute. Next add the beef strips and cook until nearly cooked through. Pour in drained can of diced tomatoes. Simmer on low heat.

Boil your water, stir in your rice. Lower the heat to medium. Pop in your strips of peppers and mung beans, adding a bit of sesame oil for flavor. Continue to stir and watch on medium until rice has soaked up the liquid. Toss, plate and serve with the beef as a topping - or mix the rice in with the beef and toss together. Either way, should be a bit o' all rightness.
