Cereal bars

Number of Servings: 8

Ingredients

    2 cups puffed rice cereal (fine chop in food processor)
    1/3 cup almond meal (or a mix of almond/walnut meal) - take whole nuts and chop into a rough mix in a food processor
    2 T flax seed meal
    1/3 cup Craisins and dried blueberries (can use just Craisins)
    1 cup GNC Whey Protein Isolate 28 (unflavored or vanilla)


    1/2 cup maple syrup (can substitute agave nectar)
    1 T coconut oil
    1 1/2 T vanilla
    2 T natural peanut butter (creamy)

Directions

Combine dry ingredients in large bowl.

In saucepan, combine remaining ingredients and slowly bring to a simmer, stir constantly.

When thoroughly mixed, combine with dry ingredients. Mix well with spoon and when cooled enough to handle, knead until all ingredients stick together.

Spray 8x8 glass pan with nonstick spray and spread mixture evenly within pan.

Place in refrigerator until thoroughly cooled and then cut into 8 portions. Store in freezer.

Great post workout snack.
