Red Quinoa Salad

Introduction

This is easy to make and delicious. It makes a great side dish or a good lunch dish. This is easy to make and delicious. It makes a great side dish or a good lunch dish.
Number of Servings: 8

Ingredients

    1 cup red quinoa
    2 cups chick peas (canned)
    1 red pepper
    1 yellow pepper
    1 onion
    1 tbsp olive oil
    1 tbsp rice vinegar

    optional: salt and pepper to season to taste

Directions

Cook the Quinoa according to directions on package. Drain it and rinse it with cold water.
Chop the peppers and onion. Add to the Quinoa. Drain and rinse the chick peas. Add them to the quinoa.
Combine the olive oil and the rice wine vinegar, add to the Quinoa. Stir well. Season with salt and pepper if you like.

Serving Size: makes about 8 servings 1 cup each
