Banana Muffins

Introduction

I wanted a yummy breakfast treat without the fat and calories! Enjoy!! I wanted a yummy breakfast treat without the fat and calories! Enjoy!!
Number of Servings: 10

Ingredients

    1 mashed banana (more if you prefer)

    1 large egg (or 1 tbsp of flaxseed with 3 tbsp’s of water for veg. substitute!)

    1/4 cup water

    1/4 cup nut butter (I used my own Almond Butter)

    1/2 cup applesauce

    1 tsp vanilla extract

    Dry Ingredients:

    1 cup of rolled oats (partially ground into flour)

    2/3 cup of flour of your choice

    1 tsp baking soda

    1 1/2 tsp baking powder

    1 tsp cinnamon

    1 packet of Stevia (optional)

Directions

1) Preheat oven to 350 degrees F.

2) Mix wet ingredients together. Mix dry ingredients together in separate bow. Combine. Mix thoroughly.

3) Grease/oil muffin tin pan (or loaf pan if your going that route) and fill with batter.

4) Bake ~ 20-25 minutes

Serving Size: 10 Muffins or 1 loaf
