Quick baked apple with raisins & soy custard

Ingredients

Apples, fresh, 2 cup slices
Raisins, 0.25 cup (not packed)
Soy Milk, 10 fl oz
Cornstarch, 2 rounded tsps
Sucralose (like Splenda), 1.5 tsp
Cinnamon, ground, a pinch
Directions
Divide the apples and raisins between 2 small bowls, sprinkle each with a pinch of cinnamon then microwave on high for 2 minutes.
Mix a little of the soymilk with the cornstach and sucrolose in a cup and heat the rest on the stove in a small pan. As the milk heats up add the cornstarch stirring continuously with a wooden spoon. When it has thickened, just as it boils, remove from the heat and divide between the bowls of apple and raisins. Allow to cool a little before eating.
