Ingredients

6 carrots
2 large apples, 1 green & 1 red
1/4 c. fresh chives, chopped
1 T. olive oil
1 1/2 T. lemon juice
1 t. sugar
1/4 t. pepper
4 oz. feta cheese
Directions
1. Wash apples & carrots and scrub well. Leaving the skin on, cut into thin matchsticks.
2. Add chives to apples & carrots.
3. Mix oil, lemon juice, sugar & pepper in a small bowl and pour over apple/carrot mixture. Stir to mix it in.
4. Crumble feta cheese over the top.
I transfer this into 6 plastic "to go" containers and store it in the refrigerator to pack in lunches or grab for a quick snack.
