    1/8 t. salt
    pinch pepper
    1 lb. top round steak
    2 t. olive oil
    8 oz. button mushrooms, halved
    1 onion, chopped
    1 T. minced garlic
    1 t. dried thyme
    2 large carrots
    1 lb. potatoes
    4 c. beef bouillon, sodium-free

Directions

2. Cut beef into 1" cubes. Add to the bad and shake to coat. Refrigerate 15 minutes or longer, while you chop the vegetables.

4. Reduce heat to medium. Add mushrooms, onion, garlic and thyme. Cook about 10 minutes, stirring occasionally.

5. Peel and dice carrots and potatoes into large dices and add to the beef.

6. Add bouillon to the beef and bring to a boil. Reduce heat to low. Cover and simmer 1 hour.
