Introduction

I lightened up an old favorite by substituting roasted apple for sour cream. Serve with cream cheese to increase the protein. May also add chopped walnuts to the top of the loaves before baking for an extra treat. I lightened up an old favorite by substituting roasted apple for sour cream. Number of Servings: 20

Ingredients

    1 apple
    2 bananas
    3 t. vegetable oil
    3/4 t. vanilla extract
    3 eggs, beaten

    1 1/2 c. flour
    1/2 c. sugar
    3/4 t. baking powder
    3/4 t. baking soda

Directions

1. Preheat oven to 350 degrees.

2. Cut the apple in half and remove the seeds. Place face down in microwave, adding just enough water to cover the bottom of the dish. Microwave the apple 15 minutes, until the inside is soft. (May roast in the oven the same way, if you prefer.)

3. Smash the apple and banana with a fork. Add oil, vanilla and eggs to the banana mixture.

4. Mix all the dry ingredients in a large bowl.

5. Add the banana mixture to the dry ingredients and mix just until moist.

6. Bake in bread pan or muffin tins until "toothpick test" comes out clean.
35 minutes for 4 small loaf pans.
55 minutes for 1 regular loaf pan.

7. Cool 10 minutes on wire rack before removing from pan.

One serving = 1/5 of a small loaf.

If you are not serving it all at one time, wrap individual serving sized in plastic wrap and place all wrapped items in a zip lock freezer bag.

To serve: remove plastic wrap and microwave 30 seconds.
