Broccoli Soup : 2 Servings

Introduction

Use 1 package of frozen, chopped broccoli, or 1 head of fresh broccoli. I use dry bouillon powder to make chicken broth for soup. It is inexpensive and easy to keep on hand. Ingredients

    1 T. olive oil
    1 Large onion, finely chopped
    2 garlic cloves, minced
    1 bunch broccoli, or 1 pkg frozen, chopped
    1/8 t. salt
    pinch pepper
    2 c. chicken bouillon or broth, sodium-free
    1/2 c. milk
    2 T. lemon juice

Directions

1. Saute onion and garlic in olive oil until tender, about 7 minutes.

2. Add broccoli, salt, pepper and chicken broth to the onions and bring to a boil. Reduce to a simmer, partially cover and cook until broccoli is very tender, about 25 minutes.

3. Add milk to the broccoli and heat through.

4. Transfer soup to food processor or blender and blend until desired consistency. Stir in lemon juice and serve warm.

Sometimes we like to drink this from a mug, so I blend until very smooth on those cold nights, but when eating from a bowl, it's good to just pulse it a few times and leave some "chunks" in.
