Introduction

Quick, hearty, nutritious and delicious! Can put together the night before and let it sit in the refrigerator until morning to save 10 minutes prep time the next morning. Quick, hearty, nutritious and delicious! Can put together the night before and let it sit in the refrigerator until morning to save 10 minutes prep time the next morning.
Number of Servings: 2

Ingredients

    3 eggs
    1 slice bread (any kind), broken up.
    dash salt, pepper, basil
    2 oz. cheddar cheese, shredded
    1/4 c. onions, diced
    1/4 c. zucchini, diced
    1/4 c. bell peppers (any color) diced
    1 c. fresh spinach, thinly sliced (optional)

    Any vegetables on hand can be mixed into the egg or put on top, such as tomatoes, mushrooms, green onions, etc.

Directions

Preheat oven to 350 degrees.
Spray skillet and pie plate with cooking spray.

Whip eggs, egg whites and spices together with a fork.
Stir broken bread into the egg and set aside.

Saute vegetables until tender.

Add cheese and sauteed vegetables to egg mixture and pour into a pie plate.

Top with thinly sliced or shredded fresh spinach (optional).
Bake 15-20 minutes, until knife inserted into center comes out clean.

Serves 2.
