Maple Almond Flan : 4 Servings

Introduction

South Beach Phase 1. Sugar and syrup are not part of phase 1... I use the real thing, and have accounted for that in the nutritional values, but the original recipe calls for substitutes. Ingredients

    3 T. slivered almonds
    8 oz. evaporated milk, fat-free
    1/4 c. plus 2T. skim milk
    2 eggs
    1 1/2 T. sugar
    1/4 t. almond extract
    1/4 t. vanilla extract
    4 T. maple syrup

Directions

Heat oven to 275 and toast almonds on baking sheet, stirring once, until lightly golden 8-10 minutes. Roughly chop and set aside.
Heat milk over medium-low heat until scalded but not boiling. Remove from heat and set aside.
Whisk together egg, sugar and extracts. Whisk in 1/2 c. of heated milk mixture, then the rest of the milk mixture.
Divide mixture into 4 custard cups.
Place cups in baking pan and add hot water to come half way up cups.
Bake 25 minutes, until set.
Remove from oven, cool in the pan, then chill in the refrigerator for at least 4 hours or overnight.
Half hour before serving, remove from refrigerator.
Just before serving, run knife around edges and invert onto serving plates. Drizzle each with 1 T. syrup and sprinkle with almonds.
